Studies on drying, packaging and storage of solar tunnel dried chilgoza nuts
نویسنده
چکیده
Chilgoza (Pinus gerardiana) is one of the pine nuts among six species found in India which produce edible nuts. Because of the traditional handling of this nut by tribals, it lasts only for few weeks in the market. Studies were undertaken to compare the solar drying modes for drying of this nut and screen out the suitable packaging material for its storage. Extracted nuts were dried under three solar drying means like solar cabinet drier (46-52 0C), solar tunnel drier (43-47 0C) and open sun (18-220C). Solar tunnel drier was found to be best drying mode for drying quality nuts as compare to the others. So, nuts dried in this drier were packed in five different packaging materials and stored under ambient conditions for six months. The some physico-chemical quality characteristics like aw (0.208), oil (49.1%) total carbohydrates ( 24.9%), and proteins ( 11.8%) and sensory quality attributes of packed nuts were retained better in glass jars closely followed by aluminum laminate pouch after six months of storage as compared to others. Solar tunnel drier was the best drying mode and glass jar as well as aluminum laminate pouch were the best materials for packaging and storage.

Study on the Possibility of Eliminating Sulfuring Process in the Production of Dried Apricots
The rate of agricultural and horticultural waste is high in Iran, and one of the best preventive methods is to convert fruits and crops to the products which have long shelf life and high quality. Traditionally apricots are dried in front of sun with excessive sulfuring which is proved to be harmful for human. In the current study apricots were dried by either solar tunnel dryer or conventional...
متن کاملDetermination of the Best Drying Temperature of Hazelnut (Corylus avellana) after Six Months of Storage
Drying is one of the most important stages of hazelnut processing and its optimization improves the quality of the final product. The quality of hazelnut is dependent on chemical and organoleptic characteristics of fruit that is affected in the drying process. In present research, samples of Gerd cultivar of hazelnut (Corylus avellana) were dried in shelled and in-shell forms using a laboratory...

Wild pomegranate arils were blanched in hot water at 85°C for one minute and then pretreated by soaking in 0.2% solution of potassium metabisulphite (KMS) for 2 minutes. The pretreated arils were dried in a mechanical drier at 60°C as well as in a solar drier. The time taken to bring the moisture content to 8% (db) during mechanical drying and solar drying was 5.5 hours and 13 hours respectivel...
متن کاملInfluence of pre-treatment on the drying process of apricots
ABSTRACT- Drying has been used for the preservation of fruits since ancient times. Dried apricot reduces the damages, weight and volume losses, packaging space, storage and handling costs. In this paper, the effects of hot air dryer on an Iranian apricot cultivar ”Noori” have been investigated. The experiment was conducted at three temperatures (30, 40 and 50oC), three fruit thicknesses (5, 10 ...
متن کاملDrying Characteristics and Physical and Nutritional Properties of Shrimp Meat as Affected by Different Traditional Drying Techniques
The influence of different drying methods on physical and nutritional properties of shrimp meat was investigated in this study. Peeled shrimps were dried separately using an air-oven dryer and a tunnel solar dryer. The drying profile of shrimp meat was determined in the two drying systems by monitoring moisture loss over the drying period. Changes in color, proximate composition, and rehydratio...
